Ingredients

Air Fryer Fries

  • 4 Russet Potatoes medium, well scrubbed
  • 2 tbsp Olive Oil plus more for spraying
  • 1 tsp Sea Salt more or less to taste

Greek Seasoning

  • 1 tbsp Olive Oil
  • 1 tbsp Fresh Lemon Juice
  • 1 tsp Dried Oregano
  • 1 tsp Dried Dill
  • 1/2 tsp Sea Salt or seasoning salt, more or less to taste

Homemade Tzatziki

  • 1 1/2 cup Plain Greek Yogurt
  • 1 1/2 cup Cucumbers shredded
  • 1 clove Garlic minced
  • 2 tbsp Fresh Squeezed Lemon Juice
  • 2 tbsp Olive Oil
  • 1 tbsp Fresh Dill finely chopped
  • 1 tbsp Fresh Parsley finely chopped
  • 1 tsp Fine Sea Salt

Instructions

Homemade Tzatziki

  • Grate cucumbers using the large holes on a box grater and gently squeeze the excess liquid out over the sink using a fine cheesecloth, or lint-free paper towel (work in batches if needed). Transfer squeezed cucumbers in a medium sized mixing bowl, repeat until finished.
  • Add the plain greek yogurt, minced garlic, fresh lemon juice, olive oil, fresh dill, fresh parsley and salt to the bowl, stir until incorporated. Set aside for at least 15 minutes to allow flavours to meld, then serve or allow to chill in refrigerator for later use.

Air Fryer Greek Fries

  • Cut potatoes into 1/2-inch thick long pieces (resembling french fries). Soak in cold water for a minimum of 30 minutes to an hour to remove the excess starch and stop the oxidizing process. Drain and pat dry completely.
  • Preheat the air fryer to 400°F (200°C). In a large bowl, add dried potatoes and generously coat in olive oil, then sprinkle with sea salt. Spray air fryer basket with olive oil under coated then transfer and arrange the dried potatoes onto the basket in a single layer (do not overlap or crowd).
  • Place basket into air fryer, and cook for 15-20 minutes or until desired crispiness is achieved, flipping at the halfway point. When done, transfer fries to a large bowl season with herb blend and lemon juice, toss then serve immediately.

Notes

  • Cut Evenly: cut the potatoes into same-sized pieces to ensure even cooking, a mandolin will help here.
  • Use High Heat: For air frying or oven baking, set the temperature to about 400-425°F (200-220°C). This helps to create a crisp exterior while keeping the inside nice and fluffy.
  • Single Layer: Arrange the fries in a single layer on the air fryer basket to ensure maximum and even air flow and circulation.
