Bruschetta Chicken Recipe

Ingredients

  • 4 lrg Chicken Breasts pounded to even thickness, or boneless, skinless chicken thighs
  • 1 tbsp Garlic minced
  • 1 tbsp Italian Seasoning
  • 1 tsp Salt more or less to taste
  • 1/2 tsp Black Pepper
  • 4 tbsp Olive Oil divided

Bruschetta Topping

  • 4 Roma Tomatoes or any variety, diced
  • 1/2 sm Red Onion diced
  • 2 tbsp Fresh Basil chopped, plus more for garnish
  • 1 clove Minced Garlic
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 5 tbsp Olive Oil extra virgin
  • Mozzarella Cheese parmesan cheese, burrata, feta, fresh mozzarella cheese or goat cheese, as desired
  • 4 tbsp Balsamic Reduction or as desired

Instructions

Prepare Chicken

  • Drizzle boneless, skinless chicken breasts with olive oil then season with minced garlic, Italian seasoning, salt and pepper. Heat oil in a large skillet over medium-high heat and sear chicken breasts on both sides until browned and cooked through (about 6-7 minutes on each side). Remove from pan, set aside and allow to rest.

Bruschetta Topping

  • Dice fresh tomatoes and red onion, set aside in a medium bowl. Add fresh basil, minced garlic, oregano (optional), salt, pepper and 3 tbsp extra virgin olive oil to the serving bowl. Stir to combine, set tomato mixture aside to marinate for a minimum of 10 minutes or until chicken is cooked.

Assemble

  • Add spoonfuls of the bruschetta mixture on top of each chicken breast then add your cheese of choice (parmesan cheese, fresh mozzarella etc., fresh chopped basil and a drizzle of balsamic glaze. Serve immediately and enjoy!

Notes

  • If using chicken breasts, pound into an even thickness so the chicken cooks faster and evenly.
  • The chicken is cooked when it reaches an internal temperature of 165°F, use medium-high heat.
  • Allow the chicken to rest for at least 10 minutes. This gives the chicken time to redistribute the juices so you have juicy chicken breasts.
  • Double up on this recipe, and make a batch of bruschetta in large bowl alongside the chicken.
  • Remove chicken from fridge, at least 20 - 30 minutes prior to cooking to take the chill off.
