Churro Waffles (Light, Fluffy & Crispy)

Light and Fluffy Churro Waffles with Warm Chocolate Ganache are the perfect breakfast or brunch recipe that's easy, quick and simple to make! They are light and fluffy on the inside, crispy on the outside and served with fresh fruit like bananas, strawberries, blueberries, and a drizzle of warm chocolate sauce or whipped cream.

Ingredients

  • Waffles Dry Ingredients
  • 2 cups All-Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 tbsp Granulated White Sugar
  • Waffles Wet Ingredients
  • 2 cups Buttermilk room temperature
  • 2 Eggs room temperature
  • 1/3 cup or 6 tbsp Salted Butter melted
  • 2 tsp Pure Vanilla Extract
  • Churro Cinnamon Sugar
  • 1/2 cup Salted Butter melted
  • 1/2 cup Granulated White Sugar
  • 1 tbsp Ground Cinnamon
  • Chocolate Sauce
  • 1/4 cup Semi-Sweet Chocolate chips or finely chopped
  • 1/4 cup Milk Chocolate chips or finely chopped
  • 1/2 cup Heavy Cream
  • Additional Toppings
  • Strawberries
  • Blueberries
  • Bananas
  • Pure Maple Syrup
  • Whipped Cream
  • Butter

Instructions

  • Melt butter, set aside and allow to cool slightly.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt and sugar until lump free and well combined, set aside.
  • In another medium sized bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until blended.
  • Gradually pour the buttermilk mixture into the flour mixture and whisk until just mixed. Set batter aside for 10 to 15 minutes so the baking powder has time to activate.
  • Heat Cuisinart Vertical Waffle Maker, and turn dial to desired setting (my preferred setting is #4). Once the waffle maker has reached the desired temperature the green indicator light will turn on and 5 beeps will sound. Pour batter into the fill spout on the top of waffle maker. Allow to bake for anywhere between 3 and 4 minutes.
  • Alternatively, heat waffle maker according to manufacturer’s instructions. When the iron is heated to desired setting, grease with cooking spray (optional depending on waffle maker). Pour batter onto iron, and bake for anywhere between 3 and 4 minutes.
  • Once done remove waffle, brush melted butter on both side and generously dust in cinnamon sugar.
  • Serve immediately with fruits, maple syrup, chocolate sauce.
  • Churro Cinnamon Sugar
  • Melt butter, set aside.
  • In a shallow bowl or plate, mix together sugar and cinnamon.
  • Once done, remove waffle and brush with melted butter on both sides and dust generously in cinnamon sugar.
  • Chocolate Ganache
  • In a small saucepan over medium-low heat, warm chocolate chips and cream until melted, whisk until combined and smooth.
  • Drizzle chocolate sauce over cinnamon sugar dusted waffles, and enjoy.

Notes

Do not overmix your batter. Over-mixing will activate the gluten in the flour which produces a chewier, less-fluffy texture. // No Buttermilk? Add 1 tablespoon of fresh squeezed lemon juice or white vinegar to 1 cup of room temperature milk. Mix together and let sit for 5 minutes.
