They are very easy to make, moist and have the most amazing cinnamon sugar crumb topping. Although these muffins don't contain any coffee or caffeine, they are best served with a cup of hot coffee or cozy drink of your choice!

Coffee Cake Muffins

  • 2 cups All Purpose Flour
  • 1/2 cup Brown Sugar packed
  • 1/2 cup White Granulated Sugar
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 3/4 cup Milk
  • 1/3 cup Unsalted Butter melted and cooled
  • 2 Eggs room temperature
  • 2 tsp Pure Vanilla Extract

Crumb Topping

  • 1/4 cup Brown Sugar
  • 1/4 cup White Granulated Sugar
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1/3 cup Unsalted Butter melted and cooled
  • 1 cup All Purpose Flour

Instructions

Coffee Cake Muffins

  • Preheat the oven to 350°F (176°C), and line a muffin tin with paper or reusable liners. Then, melt butter, and allow to cool, around 10 minutes and set both aside.
  • In a medium mixing bowl, combine AP flour, brown sugar, white granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg, whisk together until well combined.
  • In another mixing bowl, add melted and cooled butter, eggs, pure vanilla extract and whisk together combined. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
  • Equally divide batter into prepared muffin trays, and sprinkle each with reserved crumb topping (use your fingers to gently press the crumbs into the batter, be generous with the crumb topping). Place into oven and bake for 20 to 25 minutes, or until muffins are golden, and toothpick comes out clean when poked into the center.
  • When muffins done, remove from oven and allow to cool for 10 minutes. Serve, and enjoy!

Crumb Topping

  • Melt butter, and allow to cool, around 10 minutes and set aside.
  • In a medium bowl, whisk together brown sugar, white granulated sugar, ground cinnamon and salt. Add in butter, flour and stir using a rubber spatula just until moist and crumbly, then set aside.

Notes

Despite the name, there's actually no coffee or caffeine in coffee cake muffins; however they’re amazing with a cup of coffee - I highly recommend!
