Heavy-Bottomed Dutchpot or Saucepan for cooking the sugar and peanut mixture.
Wooden Spoon or Heat-Resistant Spatula to stir the mixture continuously as it cooks.
Baking Sheet or Tray to pour and shape the peanut drops.
Measuring Cups and Spoons for accurate measurement of ingredients.
- 2 cups Peanuts roasted, shelled (skin removed)
- 1 1/2 cup Brown Sugar
- 1 1/2 cups Water
- 2 tbsp Ginger grated
- 1 tbsp Vanilla optional
- 1 tsp Cinnamon optional
Prepare a baking sheet or tray by lining with parchment paper or a silicone mat and set aside.
Over medium high heat in a large, heavy-bottomed dutch pot (saucepan), combine the water, sugar, ginger and peanuts. Stir continuously until the sugar dissolves and the mixture starts to boil.
Let the mixture simmer for 30 minutes until it starts to thicken, add vanilla and cinnamon (if using), then reduce heat to medium and continue stirring until liquid reduced to a thick syrup consistency and peanuts are coated in caramelized sugar.
Reduce the heat to the lowest possible setting to keep warm. Using 2 spoons, scoop the mixture and place it onto prepared baking sheet or tray. Allow to cool and harden, then enjoy!
