Jamaican Sorrel Cocktail with Sorrel Simple Syrup
Jamaican Sorrel Cocktail with Sorrel Simple Syrup, this traditional Caribbean holiday drink features a simple syrup made from seeped hibiscus flowers infused with warm cozy spices like cinnamon, allspice and ginger. It's then married with ginger beer, a squeeze of fresh lime juice, Appleton Estate rum for a boozy kick, and poured over ice for the ultimate boastful cocktail.

- 1.5 oz SooIrie Sorrel Simple Syrup see link above
- 2 oz Appleton Estate Rum adjust to liking
- Freshly Squeezed Lime Juice from half a lime
- 1 200 ml Bottle Fever-Tree Ginger Beer
- Ice
- Ginger Sugar Rim
- 1 Lime Wedge
- 1/4 cup Coarse Cane or Granulated Sugar
- 1 tsp Ground Ginger
- Garnish
- Lime Wedge or Peel
Mix together sugar, ginger on a plate. Rub a lime wedge around the rim of a glass and dip the glass into the ginger sugar mixture.
Add syrup, rum, lime juice, and ginger beer to a cocktail shaker filled with ice. Shake vigorously until chilled and pour into glass.
Garnish with lime wedge or peel, and enjoy.
