Roasted Garlic & Herb White Bean Dip Recipe

Ingredients

  • 1 head Garlic
  • 1/4 cup Extra Virgin Olive Oil + 1 tbsp, plus more for serving
  • 3 cups Cooked White Beans cannellini or great northern, drained and rinsed if canned
  • 3 tbsp Fresh Lemon Juice
  • 2 tbsp Fresh Parsley or basil, dill, or oregano, finely chopped, plus more for garnish
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste
  • 1/4 tsp Cayenne Pepper optional

Instructions

Roast Garlic

  • Preheat oven to 400°F (200°C). Slice about ¼ inch off the top of the garlic head to expose the cloves. Remove most of the outer papery skin, keeping the head intact. Place on a large piece of aluminum foil, drizzle with 1 tbsp olive oil, and wrap tightly.
  • Roast for 40–50 minutes, or until the cloves are golden brown and soft. Remove from the oven, cool slightly, then squeeze or peel the roasted cloves from their skins.

Roasted Garlic & Herb White Bean Dip

  • In a food processor or high-speed blender, combine the roasted garlic cloves, white beans, lemon juice, parsley, remaining ¼ cup olive oil, salt, black pepper, and cayenne (if using). Blend until smooth and creamy. Adjust seasoning to taste.
  • Transfer to a serving bowl. Drizzle with olive oil and garnish with extra chopped herbs and a pinch of cayenne, if desired. Serve with pita chips, crackers, or fresh veggies and enjoy!
