Shrimp & Veggies
- 2 pounds Argentinian Shrimp or any large/jumbo shrimp, peeled and deveined
- 1 tsp Garlic Powder
- Salt and Pepper to taste
- 1/4 medium Yellow Green, and Red Bell Pepper, julienned
- 2 tbsp Olive Oil divided
- 1 –2 tbsp Butter
- 3 cloves Garlic minced
- 3 stalks Green Onion for garnish
- 1 tbsp Sesame Seeds for garnish
Sweet Chili Sauce
- 3 tbsp Sweet Chili Sauce
- 1 tbsp Honey
- 2 tbsp Soy Sauce
- 1 –2 tsp Sriracha Hot Chili Sauce
- 1 tbsp Fresh Lime Juice
- 1 tsp Rice Vinegar
- 1 tbsp Brown Sugar
- 1 tsp Crushed Red Chili Flakes optional, adjust to taste
In a bowl, drizzle shrimp with 1 tbsp olive oil. Add garlic powder, salt, and pepper. Toss to coat and let marinate for 10–15 minutes while prepping other ingredients.
In a small bowl, mix the sweet chili sauce, honey, soy sauce, sriracha, lime juice, rice vinegar, brown sugar, and chili flakes (if using). Set aside.
Heat the remaining 1 tbsp olive oil and butter in a large sauté pan over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add julienned bell peppers and cook for another 2–3 minutes until slightly softened.
Turn the heat to high and add the shrimp to the pan. Cook for 3–5 minutes, stirring occasionally, until shrimp turn pink and opaque.
Pour the sauce over the shrimp and vegetables. Stir to coat evenly and cook for another 2–3 minutes until the sauce thickens slightly.
Remove from heat. Garnish with green onions and sesame seeds. Serve immediately.
Don't Overcook the Shrimp: Shrimp cook quickly! Sauté them just until they turn pink and opaque, which should take around 3-5 minutes (for large shrimp). Overcooking can make them tough.
High Heat for Searing: When cooking the shrimp, make sure your pan is on high heat. This will give them a nice sear and help caramelize the sauce for extra flavour.
Prep Ingredients Before Cooking: Have all ingredients ready to go (vegetables cut, sauce mixed) before you start cooking, as the process moves quickly once you begin sautéing.
