….what makes black cake even better? ICING…royal icing to be exact with almond paste. This combination is a classic…straight 🔥.

I definitely recommend you try it this season… but if you’re anything like my grandparents you’ll say “no dawwlin’ mi have watch di sugahhh..too much sweets nuh good fi yuh” … everything in #moderation 😆💛

You’ll typically see black cake with icing at weddings (decorated with edible pearls) or during the Christmas holidays decorated with all the festive colours!

✨Confectioners’ Sugar, sifted to ensure it’s lump-free
✨Egg Whites (or Meringue Powder), for structure and stability, a smoother texture, helps the icing harden and aids in better adhesion to bakes goods
✨Rose Water, imparts a distinctive floral and slightly sweet flavour to the icing - it’s a banger here
✨Fresh Lime Juice, gives a slight tangy/citrusy flavour to the icing and helps to stabilize the egg whites.
✨Water, used to adjust the consistency - the amount of water added can determines the thickness or thinness of the icing.

VEGAN BLACK CAKE (EGGLESS/DF) 🌱| it’s the season for black cake, and whether you’re vegan, have an allergy or dislike towards eggs or dairy… this recipe is for you! Most importantly, taste and texture is still a 10/10!!

✨Rum-Soaked Fruit & Apple Sauce — this is what binds the cake together. There are other replacements for the egg, but I prefer using something easy and readily available!
✨ Flour & Breadcrumbs — I found the addition of the breadcrumbs helps to yield a better texture on absence of the egg. Without the breadcrumbs, the texture is more pudding-like. Even if you make the traditional cake with eggs but prefer a cakier texture add 1/2 cup breadcrumbs : 1 cup flour.
✨ Vegan/Dairy-Free Butter
✨ Brown Sugar
✨ Vanilla, Browning & Mollasses
✨ Ground Cinnamon, Nutmeg & Allspice

🥜 Brown Sugar: Brown sugar has a rich, caramel-like flavour with a subtle hint of molasses.
🥜Water: The liquid base for the candy mixture.
🥜Ginger: Grated ginger adds fresh, spicy-aromatic taste.
🥜Vanilla: what’s a dessert without a touch of vanilla.
🥜Cinnamon: This adds warm depth to the peanut drops recipe, but is completely optional.
