⁣Creamy 🇯🇲 Hominy Corn Porridge • this is another breakfast porridge recipe I grew up on! We’d have this before school && we wouldn’t be hungry again until lunch time or beyond... or we’d have it on a Sunday morning before we went off to Sunday School and it’d keep us full until the benediction...&& you know that was 394853.67 hours later 😩🤣!! ⠀

Now back the porridge! It’s a creamy blend of softened hominy kernels, milk (use coconut milk to make it vegan 🌱), a pinch of cinnamon and nutmeg for flavour and sweetened with condensed milk or sugar. Serve for a hearty, healthy breakfast, or meal anytime throughout the day!⠀

⁣Jamaican 🇯🇲 Pumpkin Beef Soup • it’s M O N D A Y, my favourite day of the week and I’m starting it off with one of my faveee soup recipes! This soup is not only hearty, flavourful, and warming from the inside out, but it’s tied to SO many childhood memories. Saturday’s were for S O U P. It was a guarantee, it was a tradition, it was the norm regardless of if we as kids wanted it or not. ⠀

It’s infused with flavours of garlic, thyme and escallion (+ two scotchie for a kick) with a pumpkin beef soup base filled with dumplings, carrots, and hearty ground provision, such as yams and potatoes...&& no, you do not use pre-made beef broth... you start with beef + water + pumpkin and let that thing boil!! ⠀

P.S - I have such a deeper appreciation for all the times my parents said... we are NOT having McDonalds, we are having Rice & Peas w/ Oxtail for dinner... or we are NOT have Tim Hortons, you will be having Callaloo and Saltfish with Green Banana for breakfast...😩🤣🇯🇲!! ⠀
