How to Make Easy Classic Banana Bread

As always, start by preheating your oven to 350 degrees Fahrenheit, and spray a loaf pan with non-stick cooking spray or grease with butter and set aside. Next, move on to making your batter:

  1. In a medium mixing bowl, whisk together flour, baking soda and salt; set aside.
  2. In a large mixing bowl, add the mashed banana, granulated white sugar, eggs, and pure vanilla extract; stir until well combined, then mix in butter.
  3. Stir in flour mixture and mix together with a spatula until well combined.
  4. Pour the batter into prepared loaf pan and bake for 50 – 60 minutes or until golden brown on top and a toothpick inserted in the center of the bread comes out clean.

How to Reheat Banana Bread

To reheat banana bread, do so in the oven or toaster, alternatively you can heat banana bread in the microwave for 15 to 30 seconds.

How to Freeze Ripened Bananas

Unpeel ripened bananas and place them in a Ziploc or freezer-safe bag; remove any excess air and freeze up to 3 months.

  • The Golden Rule: ripened bananas make the best banana bread! The riper the banana (the more black spots) the better the bread (sweeter, richer banana flavour).
  • Using ripened bananas that were previously frozen, thawed then mashed adds richness to the banana bread. As well, the extra liquid keeps the banana bread extra moist and decadent.
  • To ensure your banana bread remains moist, do not overmix, or over bake your bread.
  • If your banana bread is browning on top too much or too fast, lightly tent the top with aluminum foil while baking.

Ingredients 

  • 4 Ripened Bananas, previously frozen then thawed and mashed
  • 1/3 cup Unsalted Butter, melted, plus more to grease pan
  • 3/4 cup Granulated White Sugar
  • 1 Egg
  • 1 tsp Pure Vanilla Extract
  • 1 1/2 cup All Purpose Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt

Instructions 

  • Preheat oven to 350°F (176°C) and spray a loaf pan with non-stick cooking spray or grease with butter and set aside.
  • In a medium mixing bowl, whisk together flour, baking soda and salt; set aside.
  • Melt butter, and let rest to cool slightly.
  • In a large mixing bowl, add the mashed banana (if previously frozen then thawed; mash bananas with the liquid – this has tons of flavour).
  • Add granulated white sugar, eggs, and pure vanilla extract; stir until well combined, then mix in butter.
  • Stir in flour mixture and mix together with a spatula until well combined.
  • Pour the batter into prepared loaf pan and bake for 50 – 60 minutes or until golden brown on top and a toothpick inserted in the center of the bread comes out clean. Slice and enjoy!

Notes

Frozen then Thawed Bananas – using ripened bananas that were previously frozen, thawed then mashed adds a richness to the banana bread. As well, the extra liquid keeps the banana bread extra moist and decadent!
