So, I totally understand there are people out there that don’t enjoy avocados and guacamole. Perhaps, its the texture, the flavours, or some of the ingredients like the cilantro. I too was one of those people – who didn’t particularly enjoy all this deliciousness. UNTIL ONE DAY! I can’t remember when, or how – but what I do recall is immediately becoming obsessed, o-b-s-e-s-s-e-d! Guacamole has become one of my favourite dips to make – it needs no fillers, unnecessary or unhealthy additives. Just fresh, quality ingredients with a pinch of salt & cracked pepper!

Notes & Recipe Tips

Start with ripe Avocados – you don’t want to use hard avocados, the taste and texture of the guacamole will be off. You also was to ensure the “button” or brown stem piece at the top of the avocado is still in place as it acts as a seal so air can’t get into the avocado.

Keep it Green – there’s no natural way to stop guacamole from turning brown (the oxidization process happens pretty darn quick). However, you can slow it down by using squeezes of fresh lime (acidity helps), covering with plastic (ensuring a tight seal so no air can get in), and keeping it cold, even when you serve.

What Variety of Avocado – Hass Avocados are best for making guacamole as other varieties contain more water which don’t make for great guac.

  • 1 tbsp Fresh Lime Juice
  • ¼ cup Red Onion finely chopped
  • ½ medium Tomato seeds and pulp removed, chopped
  • 1 clove Garlic

  • ½ tsp Salt more to taste
  • Black Pepper to taste
  • Tortilla Chips to serve

Instructions

  • Slice the avocados in half, remove the pit and skin and place in a medium sized mixing bowl.
  • Mash the avocado with a fork – the chunky or smoothness is all up to you!
  • Add in the remaining ingredients, and stir until mixed together.
  • Enjoy!

Recipe Notes

a. The best guacamole starts with the freshest ingredients. Look for avocados that are ripe, but still firm (it shouldn’t feel as hard as a baseball, but no soft as banana bread ready bananas). Mushy, soft, overripe avocados are no bueno!
b. The ingredients are to my liking, you can adjust/ alter as you see fit. If you love tomatoes add more, hate cilantro – add less. If you don’t like heat – omit the peppers! Above is a guideline of how to make the dish, but it’s up to you to make it how you like – experiment, that’s how I learned!
