Ever since moving from Toronto to Houston, I’ve had to become much more intentional about meal planning. With two young children, multiple businesses to run, and no family nearby to call on for last-minute help, I’ve learned that having a stocked freezer can be the difference between a stressful week and a manageable one.
Twice a year, when my mom comes to visit, we dedicate a day to freezer meal prep. Cleaning, seasoning, portioning, vacuum sealing, and freezing batches of Jamaican-style chicken meals that can be pulled from the freezer, thawed, and cooked whenever we need them. This simple system has saved us countless hours in the kitchen and makes feeding my family so much easier during busy seasons.

How Much Chicken Do I Need to Feed My Family?
One of the questions I get asked most often is how much chicken to prepare for a family meal. As a general rule, 2 pounds of boneless chicken is enough to comfortably feed a family of four when served with sides like Jamaican Rice and Peas, Roasted Baby Potatoes, vegetables, salad, or pasta.
If you’re using bone-in chicken pieces, plan for 2½ to 3 pounds to account for the weight of the bones. For larger appetites or if you’re hoping for leftovers, consider preparing an extra pound.
When I do my freezer meal prep, I portion my Jamaican chicken recipes into family-sized packs using about 2 pounds of chicken per meal. It makes weeknight cooking simple, helps reduce food waste, and ensures I always have enough to feed my family without having to guess.
My Freezer Meal Prep Process
Every freezer meal prep day follows the same basic process.
Step 1: Purchase Chicken in Bulk
I typically buy family-sized packages of chicken thighs, drumsticks, leg quarters, or a combination of all three depending on what’s available and on sale.
Another budget-friendly option is purchasing whole chickens and breaking them down yourself. Not only is this often more cost effective than buying individual cuts, but it also gives you a variety of chicken parts to work with.
Step 2: Clean and Prepare the Chicken
Once home, we wash and clean the chicken according to our usual Jamaican cooking traditions.
This includes trimming excess fat, removing any unwanted pieces, and preparing the chicken for seasoning.
Step 3: Separate Into Meal-Sized Portions
Rather than freezing one large package of chicken, I divide everything into portions that work for our family.
This makes it easy to grab exactly what we need for a single meal without having to thaw more than necessary.
Step 4: Season Each Batch
This is where I create variety for the months ahead. While each recipe has its own flavour profile, I typically start with the same Jamaican seasoning foundation.
For the dried seasonings, I almost always use a combination of garlic powder, onion powder, salt (or seasoning salt), black pepper, and either chicken seasoning (such as Knorr Granulated Chicken Bouillon) or an all-purpose seasoning blend. For fresh seasonings, I reach for scallion, onion, garlic, and fresh thyme. I also like to add Green Seasoning when I have it on hand, although it’s completely optional.
From there, I customize each batch depending on the recipe:
- Jamaican Curry Chicken – Add Jamaican curry powder.
- Jamaican Brown Stew Chicken – Add bay leaves, browning, dark brown sugar, ginger.
- Jamaican Jerk Chicken – Add Jerk Marinade, browning, pimento seeds (or allspice berries).
- Everyday Seasoned Chicken – Keep it simple with the base seasonings for a versatile chicken that can be baked, grilled, or air fried.

Step 5: Vacuum Seal and Freeze
Once seasoned, I transferred the seasoned chicken into vacuum seal bags, sealed, labelled, and frozen as flat as possible for easy storage.
Vacuum sealing helps maximize freezer space while protecting the chicken from freezer burn.

- Prep Assembly Line Style – Clean all the chicken first, then portion, then season, then seal. Working in batches is much faster than completing one bag at a time from start to finish.
- Freeze Flat (or as Flat as Possible) – Freezing bags flat saves space and helps them thaw more quickly later.
