This Honey Jerk Mayo sauce is the perfect blend of sweet and spicy, packed with delicious Caribbean flavour in every spoonful. It’s a versatile condiment that takes burgers, fries, wraps, bowls, and more to the next level.

Honey jerk mayo is one of my favourite ways to spice up any meal. It comes together in just 5 minutes with 3 simple ingredients, but the flavour tastes like so much more. I love keeping a jar in the fridge because it’s quick and easy to whip up and goes with just about everything. A little drizzle of this sauce instantly makes any meal taste extra special.

Ingredients

  • Mayonnaise: This gives the honey jerk sauce its creamy, rich base and helps balance the heat from the jerk marinade. I like to use a good-quality mayo for the best texture and flavour.
  • Jerk Marinade: The star of the recipe! It adds that signature spicy, smoky, and savoury Caribbean flavour that makes this sauce unforgettable.
  • Honey: A touch of honey ties everything together, adding just enough sweetness to mellow out the spice and create the perfect balance.

How to Make Honey Jerk Mayo

In a small bowl, I whisk together mayonnaise, jerk marinade, and honey until everything is smooth and fully combined.

You’ll see it come together into a creamy, slightly tinted sauce — that’s when you know it’s ready.

I always taste and adjust depending on the jerk marinade I’m using; some are spicier than others, so feel free to add a little more honey if you prefer it milder.

Once it’s done, I cover and refrigerate it until I’m ready to serve. The flavours get even better after resting, so it’s worth making ahead if you have time.

Recipe Tip

Taste your jerk marinade before mixing. Every brand or homemade version has a different level of spice and saltiness, so it’s worth knowing how strong yours is before combining it with the mayo and honey. That quick taste helps you find the perfect sweet-to-spicy balance.

Storage

Store any leftover honey jerk mayo in an airtight container or small jar with a tight-fitting lid. Keep it in the fridge, where it will stay fresh for up to one week. Give it a quick stir before using again, as the ingredients can separate slightly over time.

  • Tacos: My jerk chicken tacos already pack a punch, but a drizzle of this sauce takes them up a notch. The mayo adds a smooth, spicy-sweet contrast that works so well with shrimp tacos, too.

  • Corned Beef Sandwich: When I want something quick, I spread a little of this mayo on my Corned Beef Sandwich. It adds just enough spice and sweetness to cut through the rich, salty beef.
