I know many people picture different types of corned beef sandwiches, often tied to St. Patrick’s Day or the classic NY deli style. This recipe puts a Jamaican twist on the idea, swapping sauerkraut and relish for sweet peppers and a creamy mix that feels both familiar and new.

A classic corned beef sandwich usually comes on rye bread with mustard, relish, or sauerkraut. This Jamaican twist uses canned bully beef mixed with mayonnaise, onions, and sweet peppers for a creamy spread instead.

  • Corned Beef: This is the heart of the recipe and what Jamaicans call bully beef. It’s canned, easy to use, and has that rich, savoury flavour that makes the sandwich filling so satisfying.
  • Mayonnaise: It adds creaminess and helps bind everything together. The mayo balances the salty flavour of the corned beef with a smooth texture.
  • Onion: Finely diced onion gives a sharp bite and crunch that brightens up the mixture. It’s one of those ingredients that makes the spread taste fresh instead of heavy.
  • Red Sweet Peppers: I love the colour and light sweetness they add. They also give a little crunch, which makes the sandwich more interesting to bite into.
  • Green Sweet Peppers: These are slightly more earthy and less sweet than the red ones, so they round out the flavour nicely. Using both peppers keeps the filling from tasting one-dimensional.
  • Black Pepper: Just a touch is enough to bring the flavours together. It’s simple, but it really finishes the spread.
  • Lettuce Leaves: Totally optional, but I like the crisp freshness it adds against the creamy filling. It also makes the sandwich feel lighter.
  • Sandwich Bread: Soft sandwich bread works, but Jamaican hard dough bread is the classic choice for Jamaican bully beef sandwiches. It’s slightly sweet and firm enough to hold the filling.

How to Make a Corned Beef Sandwich

Mix the Filling

I start by adding the corned beef to a bowl along with the diced onion and both red and green sweet peppers. These vegetables add freshness and a bit of crunch, which balances the richness of the meat. I like to break up the corned beef gently with a fork so everything mixes together evenly.

Add the Creaminess

Next, I stir in the mayonnaise until the mixture is creamy and smooth. The mayo not only binds the filling but also softens the salty flavour of the canned corned beef. At this point, I season with black pepper and give it a taste to make sure the balance feels right.

Build Your Bully Beef Sandwich

To put the sandwiches together, I spread a generous amount of the mixture on a slice of bread. Sometimes I like to layer on crisp lettuce leaves for a fresh bite before topping with the second slice of bread. Once the sandwiches are assembled, I cut them in half and they’re ready to serve.

Recipe Tip

Use Jamaican hardo bread if you can find it. It’s slightly sweet, sturdy enough to hold the creamy filling, and adds an authentic touch that regular sandwich bread just can’t match. If you don’t have it on hand, soft white bread will still give you a tasty result.

Storage

You can store the corned beef mixture as leftovers, but I recommend keeping it separate from the bread. Place the filling in an airtight container in the fridge for up to two days, then assemble fresh sandwiches when you’re ready to eat so the bread doesn’t get soggy.

Is a Reuben the same as a corned beef sandwich?

A Reuben is one style of corned beef sandwich, but not the same as all corned beef sandwiches. It’s made with sliced corned beef, Swiss cheese, sauerkraut, and dressing on rye.

Yes, you can prepare the corned beef mixture a few hours in advance and keep it chilled in the fridge. Just wait to assemble the sandwiches until you’re ready to serve so the bread stays fresh.

Can I make this sandwich spicy?

Absolutely, you can mix in a little finely diced scotch bonnet pepper or a dash of hot sauce. It adds a true Jamaican kick without changing the creamy texture of the spread.

Ingredients 

  • 1 can Corned Beef
  • 1/4 – 1/3 cup Mayonnaise
  • 4 tbsp Onion, finely diced
  • 2 tbsp Red Sweet Peppers, finely diced
  • 2 tbsp Green Sweet Peppers, finely diced
  • 1/4 tsp Black Pepper, to taste
  • 4 Lettuce Leaves, optional, for freshness
  • 8 slices Sandwich Bread, or Jamaican hard dough bread

Instructions 

  • In a bowl, combine corned beef, onion, red bell pepper, and green bell pepper.
  • Mix in the mayonnaise until creamy and well combined, then season with black pepper, as desired.
  • Spread corned beef mixture onto bread slices, layer with lettuce if desired, and top with the second slice. Cut and enjoy! 

Notes

While sandwich bread is an easier, more common option, hardo bread is the traditional choice for Jamaican bully beef sandwiches.
