Light and Fluffy Churro Waffles with Warm Chocolate Ganache are the perfect breakfast or brunch recipe that’s easy, quick and simple to make! They are light and fluffy on the inside, crispy on the outside and served with fresh fruit like bananas, strawberries, blueberries, and a drizzle of warm chocolate sauce or whipped cream.
These are literally the perfect treat for a brunch time special with yourself, friends or family. For some reason, I always associate brunch with laughs, giggles and a good time. I have a few friends in which all we do is brunch. Trying out different restaurants and visiting new spots. However, since COVID-19 and having to hunker down in our homes, we still brunch…but over facetime and zoom conference calls. It’s different but it work. Here’s a recipe that is super fun to make, especially with kids they love seeing the process of the waffle batter going from liquid to solid. This recipe is easy, delicious, and a must try. Don’t forget to watch the recipe video below to see how it’s done!

How to Make Light and Fluffy Churro Waffles
Waffles
Start my mixing the batter for the waffles. Combine all the dry ingredients in a large mixing bowl. Whisk together the flour, baking powder, baking soda, salt and sugar until lump free and well combined, set aside. In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until blended. Add the wet mixture to dry mixture and mix until the batter comes together but do not over mix it.
Churro Cinnamon Sugar
This part is simple, and who doesn’t love cinnamon sugar! First, melt your butter and grab a brush. Next, in a shallow bowl or plate, mix together sugar and cinnamon until well combined. Brush the waffle with the melted butter before tossing in the cinnamon sugar.
Chocolate Ganache
What is Ganache? It’s can be a glaze, icing, sauce, or filling for pastries and desserts, made from heating cream in a saucepan pouring over chocolate and whisking until smooth. For this recipe, you make chocolate ganache by doing the following. In small saucepan over medium-low heat, warm chocolate chips and cream until melted, whisk until combined and smooth.

Tips & Notes for Making Churro Waffles
- Use a strong waffle iron, ensure it’s hot, and bake the finished waffles in the oven on a wire rack at 250 degrees Fahrenheit. Waffles tend to lose their cripsiness within minutes of coming off the waffle iron, this is because buttermilk makes for a more richer waffle.
- Do not overmix your batter. Over-mixing will activate the gluten in the flour which produces a chewier, less-fluffy texture.
- No Buttermilk? Add 1 tablespoon of fresh squeezed lemon juice or white vinegar to 1 cup of room temperature milk. Mix together and let sit for 5 minutes.

Instructions
- Melt butter, set aside and allow to cool slightly.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt and sugar until lump free and well combined, set aside.
- In another medium sized bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until blended.
- Gradually pour the buttermilk mixture into the flour mixture and whisk until just mixed. Set batter aside for 10 to 15 minutes so the baking powder has time to activate.
- Heat Cuisinart Vertical Waffle Maker, and turn dial to desired setting (my preferred setting is #4). Once the waffle maker has reached the desired temperature the green indicator light will turn on and 5 beeps will sound. Pour batter into the fill spout on the top of waffle maker. Allow to bake for anywhere between 3 and 4 minutes.
- Alternatively, heat waffle maker according to manufacturer’s instructions. When the iron is heated to desired setting, grease with cooking spray (optional depending on waffle maker). Pour batter onto iron, and bake for anywhere between 3 and 4 minutes.
- Once done remove waffle, brush melted butter on both side and generously dust in cinnamon sugar.
- Serve immediately with fruits, maple syrup, chocolate sauce.
- Churro Cinnamon Sugar
- Melt butter, set aside.
- In a shallow bowl or plate, mix together sugar and cinnamon.
- Once done, remove waffle and brush with melted butter on both sides and dust generously in cinnamon sugar.
