Why is it called a Cobb Salad?
The well-known Cobb Salad is said to be named after Robert Howard Cobb, restaurant owner of the Brown Derby located in Hollywood, CA in the early 1900’s. It is said that he was very hungry one late night, and tossed together the salad – which was of course a hit and has stuck around for decades!
How to Make Jerk Chicken Cobb Salad with Honey Mustard Dressing
- Make Honey Mustard Dressing: in a small bowl whisk together olive oil, honey, red wine vinegar, garlic, italian seasoning, salt and pepper to taste. Continue to whisk until the dressing has emulsified.
- Marinate Jerk Chicken Breasts: place skinless, boneless chicken breasts that has been pounded to an even thickness in a flat dish with a cover. Add jerk chicken marinade and allow to marinate for at least an hour to preferably overnight.
- Cook Jerk Chicken Breast: When ready to cook, heat olive oil in a grill pan skillet, or flat skillet. Add both chicken breasts to the hot skillet and cook for 5 to 7 minutes without moving them. Flip both chicken breasts over, adding another tablespoon of butter to the skillet, if needed. Continue to cook the chicken for and additional 8-10 minutes, or until internal temperature reaches 165°F (73°C).
- Assemble Jerk Chicken Cobb Salad: in a large salad bowl make a bed (base) with the leafy green lettuce. Arrange the chicken, avocado, cherry tomatoes, feta, eggs, bacon, and red onions over the greens and garnish the salad with the chopped parsley and chives. Serve with dressing separately or toss in with the salad
Tips for the Perfect Juicy Chicken Breast
- Pound – chicken breast to an even thickness for even cooking.
- Brine – your chicken breasts by filling a large enough bowl with 4 cups cold water and 1/4 cup kosher salt. Stir to combine until most of the salt has dissolved. Add the chicken breasts and let them sit in the mixture to brine for 15 minutes or up to 5 hours. This is an optional step, but a great one to do if you have time.
- Cook at Room Temp – leave your chicken breasts at room temperature for 30 minutes before you start to cook them.
- Don’t Overcook Your Breasts – cooking time will varying depending on the thickness of the chicken breasts.
What Jerk Marinade Should I Use?
You can make your own jerk marinade however, if you want to save some time, Grace Jerk Seasoning (Mild) as well as Walkerswood Jerk Seasoning (Hot) are two brands that are tried and true, always on hand and can be found in most grocery stores. They come in both mild and hot heat levels, so if spice isn’t your thing, you can opt for the mild selection.

TSS Tip: Check the heat level of your jerk marinade before you add it to the chicken. If you’re opposed to spice, go for mild, or mix the two for great flavour and heat!

The flavor profile was the perfect amount of sweet, heat and salty! I made this while visiting my family and my parents RAVED about it. The dressing they said, “brought the entire dish together” and it did! I can’t say enough good things about this flavorful and hearty salad but that I’ll be making it again and again!
