- Breakfast Sausage or Italian Sausage – adds heartiness and rich flavour. Use your favorite breakfast sausage and cook it before adding to the pan.
- Green Bell Pepper – Adds colour, freshness, and a slight crunch. Red, yellow, or orange bell peppers can be easily substituted.
- Red Onion – Gives sweetness and flavour. Finely dicing helps it cook evenly and blend into the omelette.
- Mushrooms – Adds meaty texture and earthy flavour. Finely chop for even cooking.
- Cheddar Cheese – Melts beautifully and adds richness. Sharp cheddar works particularly well, but Monterey Jack, Colby Jack, or mozzarella can also be used.

How to Make Sheet Pan Omelettes
Step 1: Prepare the Pan
Preheat the oven to 375°F (190°C). Lightly grease a rimmed sheet pan with butter or cooking spray.
Step 2: Whisk the Eggs
Crack the eggs into a large mixing bowl. Season with salt and black pepper, then whisk until well combined.
Step 3: Pour into the Pan
Pour the egg mixture evenly into the prepared sheet pan.
Step 4: Add the Toppings
Arrange the toppings over the eggs, grouping each omelette combination into its own quadrant of the sheet pan.
- Western: ham, green pepper, red onion, and cheddar cheese
- Deluxe: sausage, bacon, ham, green pepper, and mushrooms
- Spinach & Feta: spinach and feta cheese
- Vegetarian: broccoli, asparagus, red onion, and feta cheese
Step 5: Bake

Toppings – Western Omelette
- ½ cup ham, cooked, finely diced
- ¼ cup green pepper, finely diced
- ¼ cup red onion, finely chopped
- ¼ cup cheddar cheese, shredded
Deluxe Omelette
- ¼ cup Italian sausage, cooked, crumbled
- ¼ cup bacon, cooked, crumbled
- ¼ cup ham, cooked, diced
- ¼ cup green pepper, diced
- ¼ cup mushrooms, chopped
Spinach & Feta Omelette
- ¼ cup spinach, chiffonade (finely sliced)
- ¼ cup feta cheese, crumbled
Vegetarian Omelette
- ¼ cup broccoli florets, finely chopped
- ¼ cup asparagus, finely sliced
- ¼ cup red onion, finely diced
- ¼ cup feta cheese, crumbled
Instructions
- Preheat the oven to 375°F (190°C). Grease a large rimmed sheet pan with butter or cooking spray.
- In a large mixing bowl, whisk together the eggs. Season with salt and black pepper to taste.
- Pour the egg mixture evenly onto the prepared sheet pan.
- Sprinkle the toppings over the egg mixture, grouping each flavor combination into its own quadrant of the sheet pan. Add the ham, green pepper, red onion, and cheddar cheese to one corner for the Western omelette; the sausage, bacon, ham, green pepper, and mushrooms to another corner for the Deluxe omelette; the spinach and feta to a third corner; and the broccoli, asparagus, red onion, and feta to the remaining corner for the Vegetarian omelette.
- Bake for 15–18 minutes, or until the eggs are set and the center no longer jiggles.
- Remove from the oven and allow the omelette to cool for 2 to 3 minutes. Slice into squares and serve warm or save for later, enjoy!

- Use a sheet pan with a tall rim to prevent the eggs from spilling over.
