Easy Coffee Cake Muffins, these are a classic breakfast treat or anytime muffin recipe that many love and adore! They are very easy to make, moist and have the most amazing cinnamon sugar crumb topping. Although these muffins don’t contain any coffee or caffeine, they are best served with a cup of hot coffee or cozy drink of your choice!

Easy Coffee Cake Muffins
I love a good moist, and flavourful muffin, especially when they’re bakery-style made fresh in the comfort of my own home! These coffee cake muffins, although containing no coffee or caffeine are what my breakfast and morning dreams are made of! They are light and fluffy, yet moist and just so good! I definitely recommend you give it a try, and please don’t forget the cinnamon sugar crumb topping – it’s a must!

How to Make Easy Coffee Cake Muffins
1. Make Crumb Topping – in a medium bowl, whisk together brown sugar, white granulated sugar, ground cinnamon and salt. Add in butter, flour and stir using a rubber spatula just until moist and crumbly, then set aside.
2. Preheat Muffins & Melt Butter – preheat the oven to 350°F (176°C), and line a muffin tin with paper or reusable liners. Then, melt butter, and allow to cool, around 10 minutes and set both aside.
3. Dry Ingredients – In a medium mixing bowl, combine AP flour, brown sugar, white granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg, whisk together until well combined.
4. Wet Ingredients – In another mixing bowl, add melted and cooled butter, eggs, pure vanilla extract and whisk together combined. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
5. Divide Batter & Add Crumb Topping – equally divide batter into prepared muffin trays, and sprinkle each with reserved crumb topping (use your fingers to gently press the crumbs into the batter, be generous with the crumb topping).
6. Bake – Place into oven and bake for 20 to 25 minutes, or until muffins are golden, and toothpick comes out clean when poked into the center.
7. Serve & Enjoy – when muffins done, remove from oven and allow to cool for 10 minutes. Serve, and enjoy!
Easy Coffee Cake Muffins Recipe Tips and Notes
- Make the crumb topping first. As it sits, it will absorb the butter and become more crumbly by the time you’re ready to use it.
- Mix ingredients just until the dry ingredients are moistened (around 10-12 turns if mixing by hand).
- Don’t overmix your batter as doing so will lead to a more dense muffin.
- Fill muffin liners until 3/4 full, this should leave just enough room for the muffins to rise and fill each cup evenly with the crumb topping.
- Check for doneness using the toothpick method. Stick a toothpick in the center of a muffin, remove, and it should come out clean, indicating doneness.
- Every oven is different. To avoid over baking, check for doneness around the 20 minute mark.
TSS Tip – despite the name, there’s actually no coffee or caffeine in coffee cake muffins; however they’re amazing with a cup of coffee – I highly recommend!

Baking can often be very daunting for beginners or the average home cook, however, it doesn’t have to be! Here are a few general tips for success that you should remember for the next time you bring out a mixing bowl and wooden spoon.
- Read the Recipe First, before Starting – there has been so many times I’ve messed up or had a failed recipe simply because I unintentionally skipped over a step, or didn’t follow a specific method. Reading ahead will help you know what to expect ahead of time.
- Prep All Your Ingredients – measure your ingredients before starting the recipe, and have everything laid out on the counter ready-to-go. This helps to ensure you have all the ingredients needed, avoiding the need to make ingredient substitutions. In addition, it helps you ensure accurate measurements for all ingredients.
- Measure Ingredients Accurately – this is one of the most important tips. A tasty baked good consists of accurately measured and precise ratios, as well as a recipe that has been tested many times. Luckily, half the battle is won when a recipe is well written, your job is to follow the instructions, measurements and method, spot on.
- Measuring Wet & Dry Ingredients – for wet ingredients use clear liquid measuring cups For dry ingredients, use measuring cups and spoons.
