Easy Bruschetta Chicken Recipe

It’s light yet filling, cheesy and savoury with a beautiful presentation that makes it great for potlucks, barbecues, and picnics.

What is Bruschetta?
Bruschetta (pronounced brew-SKET-uh, not brew-SHET-uh) is an Italian antipasto (appetizer) made with grilled bread topped with ripe tomatoes and mozzarella cheese. It originated in Tuscany during the 1400s and has since become popular all over the world.
What is Bruschetta Chicken?
Bruschetta chicken is a variation of classic bruschetta. Instead of toasted bread, the base is chicken.
What’s Needed to Make This Recipe (Kitchen Tools and Equipment)
- Large Skillet – to grill the chicken in.
- Medium Bowl – use this to contain the bruschetta before adding it to the grilled chicken. Upsize to a large bowl and make a double batch for double the enjoyment.
Ingredients and Ingredient Notes
- Chicken Breasts – pounded to even thickness.
- Garlic – this is an optional ingredient, but adds lovely flavour. Mince then add to the chicken or use garlic powder.
- Seasoning – I used Italian seasoning (my preferred brand is Club House Italiano seasoning blend), salt (more or less to taste) and black pepper.
- Extra Virgin Olive Oil (EVOO)- divided as you will be using it when seasoning the chicken as well as to coat the skillet. Extra virgin, has a stronger flavour and no chemical processing. Olive oil has a milder taste with some chemical processing which removes some of the natural flavours and nutrients.
Bruschetta Topping
- Fresh Tomatoes – my preferred variety is roma tomatoes, or cherry tomatoes for the bruschetta tomato mixture. However, use whatever you prefer.
- Drain the excess liquid from the diced tomatoes if desired, but I recommend keeping, as it makes a great sauce combined with the balsamic vinegar reduction.
- Red Onion – diced.
- Fresh Basil – chopped, plus more for garnish.
- Garlic – use finely chopped or minced garlic. Alternatively, you can use garlic powder.
- Seasoning – season with dried oregano, salt and black pepper.
- Extra Virgin Olive Oil – this has more flavour than regular olive oil.
- Cheese – the options are endless here. Use crumbled feta, parmesan cheese, burrata, fresh mozzarella or goat cheese.
- Balsamic Reduction (Glaze) – this is a reduction of balsamic vinegar. Use a store-bought brand like Nonna Pia’s. your local grocery stores brand or, make your own just before serving for the best results.
How to Make Balsamic Reduction
To make a simple balsamic reduction, simmer 2 cups balsamic vinegar in a saucepan with 1/2 cup brown sugar for around 10 to 12 minutes or until it’s reduced by half and has the consistency of maple syrup or honey.
How to Make Bruschetta Chicken
Prepare Chicken
Drizzle boneless, skinless chicken breasts with olive oil then season with minced garlic, Italian seasoning, salt and pepper. Heat oil in a large skillet over medium-high heat and sear chicken breasts on both sides until browned and cooked through (about 6-7 minutes on each side). Remove from pan, set aside and allow to rest.
Bruschetta Topping
Dice fresh tomatoes and red onion, set aside in a medium bowl. Add fresh basil, minced garlic, oregano (optional), salt, pepper and 3 tbsp extra virgin olive oil to the serving bowl. Stir to combine, set tomato mixture aside to marinate for a minimum of 10 minutes or until chicken is cooked.
Assemble
Add spoonfuls of the bruschetta mixture on top of each chicken breast then add your cheese of choice (parmesan cheese, fresh mozzarella etc., fresh chopped basil and a drizzle of balsamic glaze. Serve immediately and enjoy!
Chicken Bruschetta Recipe Substitutions and Variations
- Bruschetta Chicken Bake – add seasoned chicken breast to a 425°F preheated oven for 15 minutes. Then top the baked chicken with cheese and broil it for about 2 – 3 minutes. Finally, add the bruschetta mixture.
- Chicken – although I prefer boneless, skinless chicken breasts for this bruschetta chicken recipe, you can also use boneless skinless chicken thighs or whatever part you prefer. Just keep in mind that the cooking time may vary.
- Italian Dressing – this recipe does not use Italian dressing, however it would be an excellent marinade for the chicken. Add the Italian dressing to the chicken a few hours prior to cooking, set aside to marinate in the fridge then remove and prepare as directed.
- Cheese – fresh mozzarella or parmesan cheese are my favourite but you can use whatever you prefer.
Serving Suggestions and Tips
Wondering what to serve with bruschetta chicken? Here are some tasty ideas.
- Pasta – keep it light by serving the protein with spaghetti or another thin noodle.
- Sandwich – place it between two slices of hearty, crusty bread (like ciabatta or sourdough) for a bruschetta chicken sandwich.
- Veggies – keep this a low-carb meal by serving it with roasted or grilled vegetables. Alternatively, serve it with cauliflower rice or zucchini noodles. Enjoy it with a salad like Caprese Salad.
- Keeping it Low-Carb – serve this dish on a bed of green leafy lettuce or as mentioned above, zucchini noodles and stay compliant with your low carb/keto diet goals.

Recipe Notes and Tips for Success
- If using chicken breasts, pound into an even thickness so the chicken cooks faster and evenly.
- The chicken is cooked when it reaches an internal temperature of 165°F, use medium-high heat.
- Allow the chicken to rest for at least 10 minutes. This gives the chicken time to redistribute the juices so you have juicy chicken breasts.
- Double up on this recipe, and make a batch of bruschetta in large bowl alongside the chicken.
- Remove chicken from fridge, at least 20 – 30 minutes prior to cooking to take the chill off.
Can I Make this Chicken Bruschetta Recipe Ahead of Time?
Yes! I highly recommend making the bruschetta topping up to one day ahead so the flavours have the chance to mingle, developing even more flavour. You can also prep the chicken ahead of time and allow to marinate in the fridge, When ready to cook, remember to remove from fridge about 20 to 30 minutes ahead of time to take the chill off.
Storage Instructions
Before storing the chicken breast or thighs, ensure it is completely cooled as this helps prevent condensation from forming inside the storage container. Then, separate the chicken from the bruschetta and store leftovers in an airtight container in the fridge for up to 5 days.
Reheating Instructions
This bruschetta chicken recipe tastes great cold. You can chop it up and add it to a salad. But if you prefer it hot, reheat the chicken until warmed through in the microwave, oven or stovetop then spoon the cold bruschetta topping over the warm chicken for serving

- 1 tbsp Garlic, minced
- 1 tbsp Italian Seasoning
- 1 tsp Salt, more or less to taste
- 1/2 tsp Black Pepper
- 4 tbsp Olive Oil, divided
Bruschetta Topping
- 4 Roma Tomatoes, or any variety, diced
- 1/2 sm Red Onion, diced
- 2 tbsp Fresh Basil, chopped, plus more for garnish
- 1 clove Minced Garlic
- 1/2 tsp Dried Oregano
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 5 tbsp Olive Oil, extra virgin
- Mozzarella Cheese, parmesan cheese, burrata, feta, fresh mozzarella cheese or goat cheese, as desired
- 4 tbsp Balsamic Reduction, or as desired
Instructions
Prepare Chicken
