Garlic Chili Oil Noodles
Noodles are one thing on a menu I very rarely will pass up! I love a good saucy, flavourful noodle recipe that’s also quick and easy to make at home. These noodles encompass all that and more, they are simply a great meal to make for lunch, dinner or even a midnight snack!
The ingredients are simple for this recipe, noodles and a really easy garlicky sweet soy sauce. Combine the two, give a good toss and noodles are ready to be served!

It’s Simple – this is one of the best noodle recipes that’s ready in just minutes and packs a good flavourful.
Vegan/Vegetarian – this dish is completely vegan, making it a crowd pleaser even for those who eat meat.
Versatile – these noodles are absolutely delicious on their own however you can totally add in some other ingredients to switch it up! Try, shrimp, chicken, tofu, fried egg or greens such as bok choy or chinese broccoli.
What is Garlic Chili Oil?
Mostly seen in Chinese and Asian cuisine, garlic chili oil is a delicious condiment made by infusing vegetable oil with garlic and chili flakes. It is served over ramen noodle bowls, veggies, and perfect for dipping dumplings and potstickers!
What are Garlic Chili Oil Noodles?
It’s a simple noodle dish that’s made by either pouring hot oil over aromatics, in this case; garlic, chili flakes and green onions. Or, my version of heating the oil in a pan adding the aromatics, then adding noodles and giving a good toss.
What Type of Noodle to Use?
You can really use any variety of noodle you have, but if not using ramen noodles I do prefer a thinner rice noodles or flat wide wheat noodles as they soak up the flavour of the garlic chili oil well!
Ingredients and Ingredient Notes
- Sesame Oil – this gives a deep, rich, nutty flavour to the dish and should not be skipped!
- Olive Oil – any kind of neutral cooking oil such as vegetable oil, avocado oil, canola or peanut oil to name a few
- Garlic – another key ingredient, use lots of it! You can mince or finely chop the garlic using a garlic press or knife.
- Crushed Red Chili Flakes – this brings the heat, use more or less depending on your preference and heat tolerance.
- Green Onions – use lots of this as well, adds great flavour plus more for garnish adding the perfect touch of freshness!
- Low Sodium Soy Sauce – it’s not recommended to use anything other than low sodium as the dish will be too salty.
- Rice Wine Vinegar – this adds just a little bit of sweetness as well as acidity to the sauce that’s needed to balance the flavours.
- Brown Sugar – adds the perfect amount of sweetness to balance the heat from the chili flakes.
- Sesame Seeds – the perfect garnish that adds great texture as well.
- Ramen Noodles – you can use any
What’s Needed to Make This Recipe
- Large Non-Stick Pan – something large enough to hold all the noodles, non-stick to prevent sticking.
- Tongs or Chopsticks – easiest tools to toss the noodles in sauce.
- Garlic Press (optional) – a simple tool to help mince the garlic.
How to Make Garlic Chili Oil Noodles
- Cook Noodles – cook ramen noodles according to package instructions or until al dente, then drain, place in a bowl and set aside.
- Heat Sauce Ingredients – heat sesame oil and olive oil over medium high heat until hot (be sure not to burn sesame oil). Then immediately add garlic, chili flakes, green onions, soy sauce, rice wine vinegar, brown sugar and remove from heat.
- Add Noodles, Toss and Garnish – add noodles and toss well until saucy and coated. Garnish with sesame seeds and green onions if desired, add more soy sauce if needed, and enjoy!
Garlic Chili Oil Noodles Recipe Notes & Tips
Toss Noodles in Oil – if preparing in advance, toss ramen noodles in a bit of oil to prevent sticking.
Prepare Ingredients First – ensure all your ingredients are prepared and handy before starting this recipe as the longer the chili flakes sit in the oil, the spicer the dish will be.
Remove from Heat & Move Quickly – remove non-stick pan from heat immediately after adding the ingredients, as the longer the chili flakes sits in the heat, the spicer the noodles will be.
Oil – you can use any kind of neutral cooking oil such as vegetable oil, avocado oil, canola or peanut oil to name a few along with the sesame oil.
If Noodles Too Spicy – add more sugar to help neutralize the heat.
Serve Hot or Cold – this dish can be served hot or cold depending on preference (also the heat is not as strong when served cold!).
Don’t Overcook Noodles – the noodles will continue to cook slightly when they are tossed in the pan. Cook the noodles just until slightly al dente.
How Do You Serve Garlic Chili Oil Noodles?
These chili oil noodles are great on it’s own, and it can also be served either hot or cold. For cold noodles, rinse them under cold water and drain very well. If you prefer hot noodles, drain well with a colander and toss in the garlic chili oil immediately!
What Garnishes to Use
I recommend serving with loads of green onions as a garnish as it add great texture and freshness to the dish! You can also garnish with regular or toasted sesame seeds for some added variety as well!
Recipe Add-Ins and Variations
You can add in some protein to this dish such as chicken, beef, shrimp, and pork. Alternatively, you can add vegetables such as broccoli, bok choy, carrots, onions etc. or tofu to keep it completely vegan.
How to Make Ahead of Time
If preparing these noodles in advance, drizzle a bit of oil over the noodles to prevent them from sticking together.
How to Store
Store leftover noodles in an airtight container and keep refrigerated for up to 3 days.
How to Reheat
To reheat the noodles add them to a pan with a light tough of neutral oil on the stovetop and warm on medium heat until heated through. Alternatively, you can reheat in a bowl in the microwave until warmed through.

You can use less chili flakes, 1/2 tsp or less depending on your tolerance or you can add more brown sugar to help neutralize the heat. The main tip is to remove the non-stick pan from heat immediately after adding the ingredients, as the longer the chili flakes sits in the heat, the spicer the noodles will be.

Garlic Chili Oil Noodles
Equipment
- 1 Large Non-Stick Pan
- Tongs or chopsticks

- 2 tbsp Sesame Oil
- 2 tbsp Olive Oil
- 4 cloves Garlic, minced
- 1-2 tsp Crushed Red Chili Flakes, more or less to taste
- 2 stalks Green Onions, sliced, plus more for garnish
- 1/4 cup Low Sodium Soy Sauce
- 2 tsp Rice Wine Vinegar
- 3 tbsp Brown Sugar
- 1 tsp Sesame Seeds, for garnish
- 3 pcks Ramen Noodles

- Cook ramen noodles according to package instructions or until slightly al dente (with a slight bite to them), then drain, place in a bowl and set aside.
- Heat sesame oil and olive oil over medium high heat until hot (be sure not to burn sesame oil). Then immediately add garlic, chili flakes, green onions, soy sauce, rice wine vinegar, brown sugar and remove from heat.
